LP muffin BUTTERMILK PECAN WAFFLES 2 cups all-purpose flour 1 tablespoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 4 eggs 2 cups buttermilk 1/2 cup butter or margarine, melted 3 tablespoons chopped pecans Combine the flour, baking powder, baking soda and salt; set aside. In a mixing bowl, beat eggs until light. Add buttermilk; mix well. Add dry ingredients and beat until batter is smooth. Stir in butter. Pour about 3/4 cup batter onto a lightly greased preheated waffle iron. Sprinkle with a few pecans. Bake according to manufacturer"s directions until golden brown. Repeat until batter and pecans are gone. Yield: 7 waffles (about 8 inches each). WONDERFUL WALNUT WAFFLES 2 egg yolks 2 cups milk 2 cups all purpose flour 1 tablespoon baking powder 1/2 teaspoon salt 1/3 cup canola or vegetable oil 2 egg whites stiffly beaten 3/4 cup chopped walnuts 1.Preheat waffle maker. This recipe is for a waffle with a non-stick surface. 2.By hand, mix all ingredients together except the egg whites and nuts. Do not over mix. Gently fold in beaten egg whites. 3.Sprinkle about 1 tablespoon chopped walnuts over the waffle grids then 1/2 cup batter over the nuts. Close waffle maker, bake until steam no longer escapes, about 5 minutes. Variation: Bacon Waffles: Cook bacon strips until crisp. Crumble 1-2 strips over the waffle grids then 1/2 cup batter over bacon. Bake as directed. These are wonderful with Vermont maple syrup. SOUR CREAM WAFFLES 2 eggs 1 cup sour cream 1/4 cup butter 1 cup buttermilk 1 1/2 cups all-purpose flour 1 tsp baking powder 1/2 tsp salt 3/4 tsp baking soda Combine eggs, sour cream, butter and buttermilk. Beat until smooth. In another bowl combine flour, salt, baking powder and soda. Add to liquid mixture. Blend well and bake in waffle baker. ORANGE PECAN WAFFLES 1 1/4 c. Flour 2 tsp. Baking Powder Salt - Dash 3 Tbl. Sugar 6 Tbl. Oil 1 Large Egg 1 1/4 C. Milk 1/4 C. Pecans - chopped Orange Peel - 3 Tbl. Blend oil, egg, milk in blender. Add dry ingredients next. Last add pecans and orange peel. LEMON WAFFLES Serves 4 4 eggs, separated 3 tablespoons sugar 1/2 teaspoon salt 1 cup milk 2 teaspoons fresh lemon juice 2 tablespoons grated lemon zest 1/4 cup butter, melted and cooled 1 cup all-purpose flour In a medium bowl, beat egg yolks with the sugar and salt. Blend in the lemon juice, lemon zest, and butter, beating well. Blend in the milk and flour alternately. Beat egg whites until stiff and fold into batter. Bake in prepared waffle iron until golden brown. CRISPY WAFFLES Annie was the cook on the Krug Ranch before she married Charles in 1900. Her old recipes inspire our ranchhand breakfasts. Like Annie, we bake from scratch for breakfast -- bread, scones, sourdough English muffins. We were lucky to have access to her cookbooks and now use some of her old recipes. Even today"s cowboys enjoy: Mix and resift: 2 cups cake flour 4 tsps baking powder 1 tsp salt Add 3 egg yolks 1-3/4 cups evaporated milk 1/2 cup oil Foil in 3 stiffly beaten egg whites. Bake in hot oiled waffle iron. BELGIAN WAFFLES 1 package dry yeast 2 cups lukewarm milk 4 eggs, separated 1 teaspoon vanilla 2 1/2 cups sifted flour 1/2 teaspoon salt 1 tablespoon sugar 1/2 cup melted butter Sprinkle yeast over warm milk; stir to dissolve. Beat egg yolks and add to yeast mixture with vanilla. Sift together flour, salt and sugar; add to liquid ingredients. Stir in melted butter and combine thoroughly. Beat the egg whites until stiff, carefully fold into batter. Let mixture stand in a warm place about 45 minutes (I put in microwave on keep warm cycle) until mixture doubles in bulk. Use 3/4 - 1 cup per waffle, makes 8-12 waffles. Top with cool whip and strawberries or fruit of your choice. Serve with coffee, juice, milk or tea. BELGIAN KAHLUA PECAN WAFFLES 1 cup plus 1 level tablespoon unbleached all purpose flour 1/2 teaspoon salt 2 tablespoons sugar 2 3/4 teaspoons baking powder 1/2 teaspoon cinnamon 1/8 to 1/4 teaspoon freshly grated nutmeg 1/2 cup (1 stick) butter, melted and cooled 2 eggs, separated at room temperature 2 tablespoons Kahlua 1 1/2 cups milk less 2 tablespoons, at room temperature 1/3 to 1/2 cup chopped pecans Sift all dry ingredients, except pecans, together into a large bowl. In a separate bowl combine well the egg yolks, butter, Kahlua and milk. Whisk milk mixture into the flour and beat until smooth. Let batter rest for about 30 minutes. Beat egg whites until stiff, not dry. Fold egg whites, along with pecans, gently into batter. Bake according to directions on your waffle iron. Makes 6-7 4" waffles - enough for 4 servings. muffin

Migla
