Te dni sem za neko nalogo "raziskovala" umetna sladila in njihov vpliv na zdravje, predvsem aspartama in neotama, ki je bil z Direktivo v EU odobren 22.10.2010 . Našla sem veliko gradiva, ob prebiranju katerega sem se zgrozila. Prilagam del članka iz ene od slvenskih spletnih strani - ki je v bistvu prevod ameriškega članka.

Namen tega posta je izključno osveščenost potrošnikov. Vsak bo z informacijo storil, kar bo hotel. Ali zavrgel, kot še eno propagando, ali pa malo pogledal na deklaracije izdelkov...

 

Toksičnost aspartama

Aspartam je ime za umetno sladilo, ki se pogosto uporablja za slajenje pijač in ostalih napitkov ter živil (jogurti, žvečilni, bonboni, pudingi, mueslji, vitamini itd.). Prodaja se pod različnimi zaščitenimi imeni, kot so Equal, NutraSweet, Canderel, Spoonful itd. Leta 1965 ga je po naključju odkril James M. Schlatter, kemik družbe G.D Searle & Company, ko je iskal zdravilo proti čiru na želodcu. Ko je ustvaril aspartam iz aspartanske kisline in fenilalanina, je okusil njegov sladek okus.

Lastnosti

Aspartam je sintetična spojina dveh izoliranih amino kislin, fenilalanina in aspartanske kisline, kemično povezano z metanolom (lesni alkohol). Njegovo kemično ime je N-L-aaspartyl-L-phenylalanine-l-methyl ester (APM). Ima kalorično vrednost 4 kcal/g, vendar je 180-krat slajši od sladkorja in se ga zato uporablja v zelo majhnih količinah, saj je njegov doprinos k skupni kalorični vrednosti živila zato zanemarljiv. Občutljiv je na segrevanje, ker razpade in izgubi večji del svoje sladkosti, zato se ga uporablja predvsem v hladnih živilih. Prav tako je občutljiv na izdelke, ki imajo visoko pH vrednost. Pri sobni temperaturi je najbolj obstojen pri pH 4,3, kjer je njegova razpolovna doba skoraj 300 dni.

Samo v ZDA je dodan že več kot 6000 izdelkom. Uporabniki poročajo, da okus aspartama ni povsem enak okusu sladkorja, poleg tega pa okus sladkosti ostane v ustih dalj časa. Za razliko od ostalih umetnih sladil, ki vplivajo na izločanje inzulina (saharin, ciklamat ...), aspartam nima tega učinka.

Aspartam je sestavljen iz 40 % aspartanske kisline, 50 % fenilalanina ter 10 % metanola in pri presnovi razpade na naštete kemikalije, pri nadaljnji presnovi pa tudi na formaldehid in mravljinčno kislino:

  • aspartanska kislina: sodi med kemikalije, ki v večjih količinah deluje kot eksotokskin in tako povzroča nevrološke poškodbe. Veliko študij na živalih je pokazalo poškodbe na določenih delih možganov in posledično razvoj kroničnih bolezni (mnenja znanstvenikov glede vprašanja, ali ima aspartanska kislina enak učinek tudi na ljudi, so deljena). Po uživanju aspartanske kisline v aspartamu lahko pride do resnih kroničnih nevroloških motenj in drugih akutnih simptomov (glavoboli, migrene, nespečnost, trebušne bolečine, težave s spanjem, napadi tesnobe, depresije in astma), ena od najpogostejših težav pa je zmanjšanje sposobnosti pomnjenja.
  • fenilalanin: aminokislina, ki je v možganih normalno prisotna. Bolniki s prirojeno genetsko motnjo fenilketonurijo ne morejo normalno presnavljati fenilalanina, zato pride pri uživanju aspartama do povečane koncentracije fenilalanina v možganih, kar lahko v skrajnih primerih privede tudi do smrti (zaradi tega morajo izdelki, ki vsebujejo aspartam, nositi opozorilo, da je izdelek vir fenilalanina). Do previsoke koncentracije fenilalanina v možganih pa lahko pride tudi pri zdravih ljudeh, zlasti v kombinaciji aspartama z ogljikovimi hidrati, kar lahko privede do zmanjšanja nevrotransmiterja serotonina, to pa povzroči čustvene motnje in depresijo. Fenilalanin razpade na diketopiperazin, agent, ki povzroča možganski tumor, kar so pokazale laboratorijske raziskave na podganah. Šest mesecev po tem, ko je aspartam dodan v gazirane pijače, ga 25 % razpade v diketopiperazin.
  • metanol: sprošča se iz aspartama, ko se ta segreje na 30 stopinj Celzija ali več. Zaradi tega aspartama ni priporočljivo toplotno obdelovati. Lahko pa pride do izločanja metanola pri nepravilnem skladiščenju, kar je zlasti pogosto v poletnih mesecih. Metanol je smrtonosen strup, ki se zelo počasi izloča iz organizma in povzroča celo vrsto dolgotrajnih zdravstvenih težav. V telesu se hitro absorbira in razpade na mravljinčno kislino in formaldehid, ki je prav tako smrtonosen živčni strup. V kombinaciji z aspartansko kislino pa se toksični učinek formaldehida še poveča. Metanol je specifično toksičen do optičnih živcev in je znano, da povzroča slepoto.

Zdravje

Aspartam je povzročitelj več kot 75 % negativnih reakcij, ki so bile v obdobju med letoma 1981 in 1995 prijavljene na FDA. Zabeleženih je 92 stranskih učinkov, ki so jih prijavili zdravniki in uporabniki, najpogostejši med njimi pa so: glavobol, migrena, vrtoglavica, izguba zavesti, slabost, nespečnost, težave z vidom in sluhom, težave z dihanjem, piskanje v ušesih, utrujenost, povečanje telesne teže, krči v mišicah, oteženo pomnjenje in razne čustvene motnje (depresija, razdražljivost, napadi panike ...) Prav tako pa naj bi uživanje aspartama lahko spodbudilo ali poslabšalo kronične bolezni, kot so tumor na možganih, multipla skleroza, epilepsija, sindrom kronične utrujenosti, Parkinsonovo in Alzeimerjevo bolezen in duševno zaostalost. Aspartama ne smejo uživati nosečnice, saj lahko povzroči razne deformacije pri plodu.

American Airforce piloti so dobili navodila, naj ne pijejo lahkih gaziranih pijač, ker zaradi vsebnosti aspartama vplivajo na njihovo sposobnost letenja.

Veliko pilotov je "padlo" na obveznem letnem testiranju, prav v povezavi z aspartamom.

Sama se jima že dolgo izogibam kar se le da. Vsaj poskušam v mojih zmožnostih in skromnem znanju. Tudi pri kupovanju artiklov za celo družino. Žal pa je prav aspartam tudi v artiklih, za katere sploh ne bi pomislili, recimo zobna pasta in se skriva, kot je že v članku omenjeno, pod mnogimi imeni.

Navedeno pismo je organizacija Media Awareness Network pred nekaj leti uporabila kot zgled v priročniku "Kako preveriti kredibilnost internetnih strani" (ali, bolj po domače povedano "Kako uporabljati tisto sivo gobico med ušesi"). Gre za skupek direktnih laži (na primer tista o pilotih; prav tako nobena od raziskav ni potrdila vpliva aspartama na nastanek katerekoli omenjene bolezni), psevdoznanosti (v dovolj velikih količinah je strupena tako voda kot tudi kuhinjska sol) in popolnih neumnosti (aspartam kot dodatek pijači ne more "razpasti" v diketopiperazin, ker je to encimska reakcija v živih organizmih). Skratka, gre samo za eno od zastraševalnih urbanih legend (živo srebro v cepivih, azbest v tamponih, halucinogeni v pitni vodi, svinec in ostale težke kovine v šminkah, računalniški virusi, ki bodo izbrisali trdi disk in povzročili, da bo računalnik eksplodiral na delovni mizi), ki jih je bilo včasih bolj zamudno razpečevati kot danes (treba jih je bilo nositi v fotokopirnico ali pretipkavati na karbonskih kopijah v pisalnih strojih, polniti kuverte in pisati naslove), dandanes pa zadošča samo en pritisk Send in že se nepreverjena neumnost znajde v tisočih internetnih predalih oziroma smeti forume. Kadarkoli dobite kaj takega v poštni predal, imejte toliko vesti, da pred nadaljnjim razpečevanjem vsaj toliko pogooglate, da vidite, ali gre za nateg (hoax) oziroma urbano legendo (kar bo po moji oceni držalo vsaj v 499 primerih od 500). lp, proxima

Proxima, z vsem spoštovanjem - kje je merilo, da presodiš, kaj je laž oz nateg in kje je nekaj resnice. Tole je eden izmed številnih člankov zelo različnih avtorjev. njihova imena sem poguglala in so zaposleni v institucijah, katere so delale raziskave v zvezi z aspartamom. Tam so objavljeni tuidi izsledki raziskav. Tega je ogromno, oz. toliko, da se ne morem slepiti.

Enostavno dvomim, da bi imelo toliko različnih ljudi čas in voljo, peljati gonjo proti nekemu aditivu, in pri temu nebi imeli nič od tega. Nasprotno ima proizvajalec ogromno od tega...

Mimogrede, aspratam razpade v organizmu.

Proxima Robida, najbrž je merilo presoje še vedno znanstveni članek, ki je objavljen v znnstveni reviji in gre čez nekaj cenzure. Saj veš, da je današnji čas podrejen marketingu, verjemi, veliko ljudi živi zelo dobro zaradi gonje proti različnim stvarem. Sicer je to samo moje mišljenje, ampak zakaj vsak dan nekdo ne objavi kaj o nikotinu, ki je strup, recimo. Potrjeno... in ravno tako ga ljudje konzumirajo. Bo že bolje, lep dan! Mateja

Merila so objave in citati v strokovni literaturi, peer-review in statistična kredibilnost, kar grem preverjat na Medscape, BMJ, NCCN in podobna mesta. In vedno se čudim, kako zelo se ljudje trudijo verjeti podobnim paranoidnim konstruktom, na vso moč se pa izogibajo prometnim predpisom ali preventivnim pregledom, kar bi - za razliko od podobnih mailov - utegnilo zares vplivati na preživetje. lp, proxima

Seveda, in to eden od bolj zahrbtnih. NCCN, ki sem ga imela jaz v mislih, pomeni National Comprehensive Cancer Network (enkrat, ko bo čas, bom povedala zgodbo o Nixonu in NCCN), ki ga na internetu najdemo pod URL oznako http://www.nccn.ORG - za razliko od strani, ki jo navajaš ti (http://www.nccn.NET), ki nima z originalnim NCCN nič skupnega, le da podobnost internetnega naslova zlorablja za zavajanje neukega ljudstva. lp, proxima

Če pogledamo strukturo aspartama je očitno, da je dipeptid fenilalanina in asparaginske kisline, ki ima karboksilno skupino fenilalanina zaestreno z metanolom. Edina toksična komponenta je metanol. In glede na to, da v kislem (želodec) apartam razapde na metanol in dipeptid, ga najbrž res ni dobro uživati v večjih količinah. Ampak, če je res 180X slajši od sladkorja, je najbrž v izdelkih prisoten v zelo majhnih koncentracijah. Aminokislini, ki nastaneta iz dipeptida, pa tako ali tako vsakodnevno dobivamo tudi z drugo hrano. Zato res ne razumem zakaj naj bi bil aspartam tako zelo strupen. Da pa je bolje uživati domačo, naravno hrano pa tako ali tako že vsak ve. rozi13

Mi bi morali biti vekom vekov pod rušo, ker uporabljam sladila v kar precejšnji meri že 25 let. Sploh, odkar se s splendo (in očitno z Natreenom) lepo peče.
